Got Potatoes?

What are you stocking up on in your pantry these days? We know that during these safer-at-home times, we should limit our grocery runs. Around here, stores are limiting the amount of people allowed in the store at any time. That definitely makes for a challenging Saturday morning shopping trip. Time to change the shopping day.

When you do make a grocery run, you want to make the most of it. For me, that means stocking up on staples like beans & lentils, whole grains (like rice and oats), canned tomatoes, and fresh & frozen fruits and veggies. I also like to keep stocked up on potatoes sweet potatoes, and onions which will generally keep for two to three (or more) weeks.

So I picked up a huge bag of russet potatoes a couple of weeks ago. As part of this week’s batch cooking I cooked a bunch of them in my instant pot. Having pre-cooked potatoes in my fridge makes it super easy to pull together quick meals throughout the week.

One of my favorite things to do with these potatoes is to cook them in my waffle maker. Take a warm or cold potato, unpeeled, and simply place it in your preheated waffle maker. Close the cover, smooshing the potato so the lid is just about closed. And the potato is about the size of a waffle. And then don’t touch it till its done! I let mine cook about 12 minutes - all waffle makers are different so adjust your time as needed.

These are so easy to make and cleanup is a breeze - no oil needed when cooking! I enjoyed my potato with a salad for lunch but you could have it as a side dish, breakfast, or simply as a snack. Top with your favorite toppings like salsa, hummus, chili, ketchup, whatever and enjoy!
