Happy Valentines Day!
It’s a great day for a date.
Dates are whole foods that are high in natural sugar and fiber. Most sugary treats can raise blood sugar, triglycerides, contribute to oxidative stress and cause weight gain. But dates actually have a low glycemic index (GI), which means they shouldn’t cause a major blood sugar spike. It really is the ideal food!
Native to Morocco, Medjool dates are sweet with a caramel taste and chewy texture. They are a great choice as a whole-food, plant-based sweetener. Their stickiness makes them great for binding other ingredients (like when making energy bites).
Deglet Noor dates (which are less sweet) have a nutty, buttery flavor are a great choice for adding to salads and baked goods like quick breads. They also tend to be less expensive than Medjool dates.
Here are five of my favorite things to do with dates:
1. Freeze Medjool dates: Keep some of these jewels in your freezer for those times that you just need to have a little something sweet. Pop one in your mouth straight from the freezer for a delightful treat.
2. Stuff your dates: for a more decadent treat, cut open your date lengthwise, remove the pit, fill with peanut butter and cacao nibs. Delish!
3. Make date paste or date syrup: dates are one of the best sources of a whole food sweetener. I like to keep both on hand for all kinds of recipes.
